*Product on Backorder*
The Opinel Intempora N°227 Slicing Knife (traditionally known in France as the Tranchelard) is an elite, highly specialised culinary instrument masterfully engineered to deliver flawless, tissue-thin precision across large proteins, delicate seafood, and substantial fruits. Belonging to Opinel's professional-tier Intempora series, this kitchen masterpiece features a long, beautifully narrow 20 cm smooth-edge blade that minimises surface drag and entirely prevents tearing. Cold-rolled from modified Sandvik steel and paired with a high-durability structural polymer handle, the N°227 provides incredible physical balance and cutting control. Whether you are executing a single-pass sweep through a delicate wagyu carpaccio or carving a massive holiday roast, this high-performance tool delivers the unyielding reliability demanded by commercial kitchens alongside the refined handling beloved by home gourmet creators.
Best For Culinary professionals, passionate home chefs, and charcuterie curators seeking an ultra-sharp, low-friction specialist knife designed to execute perfectly even, continuous slices of roasts, hams, raw fish, and large thin-skinned fruits without bruising or dragging.
Key Features
-
Modified Sandvik 12C27M Stainless Steel: Forged from an elite Scandinavian alloy enriched with 14.5% Chromium and 0.52% Carbon, delivering remarkable structural purity, extreme corrosion resistance, and an exceptionally durable edge.
-
Elongated Narrow Profile: The 20 cm smooth-edge blade is deliberately engineered with a slender, low-profile belly, drastically reducing ingredient friction and preventing delicate food slices from sticking to the steel face.
-
Fibreglass-Reinforced POM Handle: Crafted from high-density polyoxymethylene injected with structural fibreglass, creating an indestructible handle that offers extreme resistance to thermal shock, heavy impact, and kitchen moisture absorption.
-
Advanced Ergonomic Triangular Grip: Features an intelligently sculpted, curved bolster with a subtle triangular profile that fills the palm securely, naturally stabilizing your hand and preventing rotational twisting during heavy slicing sweeps.
-
Seamless Full-Tang Architecture: The high-purity steel blade runs continuously straight through to the butt of the handle, establishing an optimal center of gravity that significantly reduces wrist fatigue during high-volume banquet prep.

Pro Tip & Intempora Maintenance: The Intempora N°227 Slicing Knife is built to withstand the rigorous demands of busy modern kitchens. Thanks to its advanced fibreglass-reinforced POM polymer handle and premium Sandvik stainless steel composition, this knife offers exceptional resistance to water staining and chemical wear. To maintain its razor-sharp factory edge for generations, hand washing is highly recommended. Simply wipe the blade with warm, soapy water after use using a non-scratch sponge, dry completely with a clean towel, and store safely on a magnetic wood strip or inside a slot block. Avoid cutting through hard bones or frozen foods to preserve the fine, high-precision geometry of the slicing edge!

Important Note on Availability & Shipping
Our warehouse serves as our office and logistics centre rather than a retail showroom. Because we ship from multiple locations and manage high-turnover stock, not all items are available for immediate pickup.
Lead Times:
- In-Stock Items: Usually ready for dispatch the same day.
- Supplier-Dependent Items: Usually take 2–8 weeks to arrive, depending on supplier availability. Products from Adloheat may take 8–12 weeks to manufacture—they are made to order in Australia by a small business, and longer lead times reflect the care put into quality.
While we strive for fast delivery, some timelines are subject to supplier availability and are beyond our control. We appreciate your patience as we source the best quality gear for your project.
Biosecurity & Interstate Shipping Restrictions
Due to strict state biosecurity regulations, we are unable to ship some products to certain states and territories:
- Potting Mixes cannot be shipped to Western Australia (WA), the Northern Territory (NT), or Tasmania (TAS).
- Seeds cannot be shipped to Western Australia (WA).
Orders placed for these items to restricted states will be cancelled and refunded. It is the customer's responsibility to ensure that the items being ordered can lawfully be delivered to their state or territory.
