Key Features
-
100% Hot-Forged Structural Integrity: Forged from a single glowing-hot rod of steel at 1200°C, producing an unbroken grain alignment that delivers extraordinary mechanical strength, perfect balance, and a seamless transition from blade to bolster.
-
Premium High-Grade Stainless Alloy: Enriched with Carbon, Chromium, Molybdenum, and Vanadium, this elite European steel sharpens effortlessly to a keen finish while offering exceptional defense against kitchen stains and rust.
-
Optimised Hardness Rating: Precision tempered to achieve a structural hardness between **57 and 59 HRC**, ensuring the acute cutting edge retains its razor sharpness through extended high-frequency detailing work.
-
Stabilised Thermo-Heated Beechwood Handle: Crafted from natural European beech wood subjected to a specialised high-temperature baking process, establishing high water resistance, dimensional stability against shrinkage, and a comfortable feel.
-

-
De-seeding & Trimming: Slicing open spicy chillies to scrape out seeds, deveining fresh tiger prawns, trimming silver skin from small game cuts, and topping-and-tailing green beans or sugar snap peas.
-
Dicing Small Aromatics: Mincing single garlic cloves, processing small shallots into a fine brunoise, and dicing fresh turmeric roots with complete steering accuracy.
Pro Tip & Les Forgés Maintenance: The 7.62cm Paring Knife is a high-end artisan tool that requires traditional culinary care to preserve its breathtaking performance. It must never be placed inside a dishwasher or left soaking in a damp sink. Simply wash the blade under warm running water immediately after use with a soft, non-scratch sponge, and dry thoroughly with a towel. Storing it on a magnetic wood knife strip or inside a slot block protects the fine tip from rolling or chipping against other loose kitchen utensils. An occasional single drop of food-safe mineral oil applied to the beautiful beech wood handle will enrich the timber grain, prevent ambient drying, and preserve its stunning satin finish for decades to come!

Important Note on Availability & Shipping
Our warehouse serves as our office and logistics centre rather than a retail showroom. Because we ship from multiple locations and manage high-turnover stock, not all items are available for immediate pickup.
Lead Times:
- In-Stock Items: Usually ready for dispatch the same day.
- Supplier-Dependent Items: Usually take 2–8 weeks to arrive, depending on supplier availability. Products from Adloheat may take 8–12 weeks to manufacture—they are made to order in Australia by a small business, and longer lead times reflect the care put into quality.
While we strive for fast delivery, some timelines are subject to supplier availability and are beyond our control. We appreciate your patience as we source the best quality gear for your project.
Biosecurity & Interstate Shipping Restrictions
Due to strict state biosecurity regulations, we are unable to ship some products to certain states and territories:
- Potting Mixes cannot be shipped to Western Australia (WA), the Northern Territory (NT), or Tasmania (TAS).
- Seeds cannot be shipped to Western Australia (WA).
Orders placed for these items to restricted states will be cancelled and refunded. It is the customer's responsibility to ensure that the items being ordered can lawfully be delivered to their state or territory.
