Description

Opinel - Parallèle N°122 Meat & Poultry Knife – Premium 12.7cm X50CrMoV15 Forged Stainless Steel Rigid Boning & Trimming Workhorse

The Opinel Parallèle N°122 Meat & Poultry Knife is a professional-grade culinary instrument masterfully engineered to bring absolute structural power, precision, and safety to home butchery and daily meal preparation. Specially designed to handle the rigorous demands of processing raw proteins, this robust kitchen knife is defined by its rigid 12.7 cm German X50CrMoV15 stainless steel blade. Forged to a substantial 2.5 mm thickness, the blade is purpose-built to resist flexing or twisting when working closely around dense cartilage, joints, and bone structures, ensuring an unwavering, highly accurate cutting path. Anchored by a traditional French beechwood handle, the ergonomic profile features a built-in protective finger guard that physically blocks your hand from sliding forward onto the razor-sharp heel. This essential workhorse delivers the perfect combination of traditional European style, uncompromising durability, and deep confidence when portioning meat and poultry.

Best For Home butchers, weekend barbecue pitmasters, and dedicated home cooks looking for a stiff, unyielding, and highly secure boning and trimming knife to cleanly debone poultry, joint meats, and trim silver-skin with total structural control.

Key Features

  • Rigid Twist-Resistant Blade Profile: Engineered with a heavy-duty 2.5 mm thickness along the spine, completely eliminating blade flex to maintain a straight, predictable cutting trajectory through dense or challenging tissue.

  • Premium German X50CrMoV15 Steel: Forged from high-purity martensitic stainless steel enriched with Carbon, Chromium, Molybdenum, and Vanadium, offering exceptional wear resistance, premium structural toughness, and a razor-sharp factory edge.

  • Integrated Structural Handle Guard: The handle geometry features a pronounced lower bolster guard that creates a physical barrier for the index finger, protecting your hand from slippery oils and preventing accidental forward slips.

  • Sustainably Sourced French Beechwood: The handle is crafted from premium European beech wood, contoured to settle naturally into the palm, providing a warm, tactile, and reassuringly solid anti-fatigue grip during intensive prep work.

  • Agile 12.7 cm Precision Geometry: The perfectly sized 12.7 cm profile effortlessly bridges the gap between a short paring tool and a large chef knife, offering maximum tip agility for close detail work like scoring fat caps or removing tendons.

  • Trimming & Priming Large Meat Cuts: Effortlessly slicing away tough silver-skin, thick external fat caps, and connective tissue from beef briskets, pork shoulders, lamb loins, and venison roasts before cooking.

  • Portioning Boneless Proteins: Cutting raw chicken breasts into neat stir-fry strips, slicing flank steaks across the grain into uniform fajita ribbons, or dicing pork bellies into precise cubes with immaculate edge control.

  • A Practical Gift for Pitmasters: Backed by prestigious French manufacturing heritage and high-end metallurgy, making it an exceptional holiday, birthday, or housewarming gift for home smoking and barbecue enthusiasts.

Pro Tip & Parallèle Series Knife Maintenance: The N°122 Meat & Poultry Knife is a precision culinary tool built from premium German stainless steel and natural French timber. To preserve the pristine integrity of the factory cutting edge and protect the beautiful organic grain of the beechwood handle, this knife must always be washed by hand. Never place this tool inside an automatic dishwasher or leave it soaking in a wet sink basin, as high heat, chemical detergents, and prolonged moisture will swell the natural wood, loosen the handle assembly, and dull the fine cutting bevel. Simply rinse the blade under warm running water with a soft sponge and mild dish soap immediately after processing raw meats, and wipe completely dry with a cloth towel before storing it safely away in a wooden knife block or on a magnetic kitchen strip.

Shipping & Lead Times

Important Note on Availability & Shipping

Our warehouse serves as our office and logistics centre rather than a retail showroom. Because we ship from multiple locations and manage high-turnover stock, not all items are available for immediate pickup.

Lead Times:

  • In-Stock Items: Usually ready for dispatch the same day.
  • Supplier-Dependent Items: Usually take 2–8 weeks to arrive, depending on supplier availability. Products from Adloheat may take 8–12 weeks to manufacture—they are made to order in Australia by a small business, and longer lead times reflect the care put into quality.

While we strive for fast delivery, some timelines are subject to supplier availability and are beyond our control. We appreciate your patience as we source the best quality gear for your project.

Biosecurity & Interstate Shipping Restrictions

Due to strict state biosecurity regulations, we are unable to ship some products to certain states and territories:

  • Potting Mixes cannot be shipped to Western Australia (WA), the Northern Territory (NT), or Tasmania (TAS).
  • Seeds cannot be shipped to Western Australia (WA).

Orders placed for these items to restricted states will be cancelled and refunded. It is the customer's responsibility to ensure that the items being ordered can lawfully be delivered to their state or territory.
