Opinel - N°123 Carpaccio Knife Parallèle – Premium Long Flexible Slicing & Salmon Knife

The Opinel N°123 Carpaccio Knife Parallèle is a highly specialized, professional-grade culinary instrument engineered exclusively for executing paper-thin, flawless slices of delicate proteins. Featuring a commanding 30 cm long blade with an ultra-slim 1.5 mm thickness, this masterfully balanced slicing tool belongs to Opinel's contemporary Parallèle kitchen collection. Built with high-grade European stainless steel and a flexible, low-friction profile, it allows cooks to achieve uniform, translucent cuts of cured meats, smoked salmon, and premium roasts with effortless, fluid back-and-forth strokes.

Best For Gourmet home cooks, charcuterie curators, catering professionals, and seafood enthusiasts seeking an exceptionally long, flexible carving knife designed to slide seamlessly through large sides of salmon, delicate raw meats, and cured hams.

Key Features

  • Grand 30 cm Precision Blade: The extra-long profile ensures you can slice through substantial blocks of protein or whole fish fillets in a single, continuous stroke, eliminating jagged edges or uneven ridges.

  • Ultra-Slim Flexible Geometry: At just **1.5 mm thick**, the blade boasts a superb lateral flex that allows it to bend slightly and hug the natural contours of fish skin, bones, or ham stands with unmatched precision.

  • Premium X50CrMoV15 Stainless Steel: Forged from elite European high-carbon steel enriched with chrome, guaranteeing superior anti-corrosive defense against acidic foods, moisture, and fish oils while delivering a flawless, razor-sharp cut.

  • Optimal Material Hardness: Hardened to **56-57 HRC** on the Rockwell Scale, striking an expert culinary balance between reliable edge retention and straightforward routine honing on a sharpening steel.

  • Ergonomic Parallèle Handle: Features a robust 13.2 cm handle crafted from traditional, sustainably sourced French beechwood, sculpted with clean, minimalist lines to provide a stable, highly comfortable grip during extended carving service.

Ideal For (Uses)

  • Gourmet Carpaccio & Raw Meats: Achieving the razor-thin, translucent slices of beef tenderloin, venison, or veal required for authentic, melt-in-the-mouth carpaccio platters.

  • Precision Smoked Salmon Slicing: Gliding effortlessly across whole sides of cured or smoked salmon, trout, and kingfish to produce beautiful, uniform ribbons without tearing the delicate flesh.

  • Charcuterie & Ham Carving: Perfectly proportioning whole bone-in or boneless hams, prosciutto, jamón Serrano, and large logs of premium salami for high-end grazing boards.

  • Confectionery & Pastry Work: The long, thin, non-serrated spine also excels at cleanly dividing delicate sponge cakes into layers or slicing sheet-baked pastries without creating excess crumbs.

Pro Tip & Care Guidance: The N°123 Carpaccio Slicer is a precision instrument designed for soft meats and fish; it should never be used to cut through frozen foods, hard rinds, or dense animal bones. To preserve the original structural longevity, smooth grain, and beautiful finish of the authentic beechwood handle, please avoid the dishwasher and never leave the knife soaking in a wet kitchen sink. Simply hand-wash the steel blade with warm, soapy water after use, wipe it completely dry immediately with a soft cloth, and store it safely in a knife case or drawer protector. An occasional light rub of food-safe mineral oil on the handle will keep your premium slicer looking spectacular for years to come!

Oversize Item Delivery

Oversized Item Delivery Options

Oversized, heavy, and structural goods ship via specialist freight. Freight is calculated at checkout from estimated packaged volumetric or physical weight. Carrier depot audits may adjust the rate — if the increase exceeds 10%, we will contact you before processing.

Available options include:

✔ Delivery to your closest depot for pickup — default method
✔ Direct delivery — requires an operational forklift on site unless Tailgate Delivery has been specifically requested and quoted (contact us — this cannot be selected at checkout)
✔ Tailgate hydraulic lift delivery — must be specifically requested; contact us for a quote (not available as a checkout option; extra fees apply; required if you do not have a forklift)
✔ Forklift loading at our warehouse (no extra charge if you arrange your own freight)
✔ Direct truck delivery (available in Victoria)

Important Notes:

  • Shipping costs vary by location and method
  • Any carton or consignment over 25–30kg (or over 200cm) must be palletised
  • Without a specifically requested and paid Tailgate Delivery quote, palletised freight requires a forklift on site — otherwise the carrier will redirect to the nearest depot
  • Bulky and oversized items cannot be delivered to a PO Box — provide a physical street address
  • Failed deliveries, locked gates, unattended sites, or incorrect business/forklift declarations may incur carrier redelivery, demurrage, and restocking fees as set out in our Terms & Conditions

Business Delivery:

  • Selecting a business/commercial delivery rate warrants that the address has an operational forklift and certified operator during business hours
  • If the carrier cannot unload, the consignment may be redirected to a depot and secondary fees may apply
  • Additional fees may apply for failed delivery attempts due to lack of appropriate unloading equipment

See our Terms & Conditions (Article 8) for full freight and delivery rules.

Shipping & Lead Times

Important Note on Availability & Shipping

Our warehouse is a logistics hub, not a retail showroom. Listing a product online does not mean it is stored at our Thomastown warehouse — many lines ship from supplier hubs (split fulfilment may apply).

How lead times work:

  • Product page ETA: The Estimated Time of Arrival (ETA) / lead-time badge shown on the product page at checkout is the agreed delivery timeframe for that order under Australian Consumer Law.
  • Metro baselines: Advertised ETAs apply to standard metropolitan zones. Regional and remote addresses may take longer and may attract surcharges.
  • Peak seasons: Orders in March–May, August–October, EOFY (June), Black Friday/Cyber Monday (November), and Christmas/New Year (December–January) may automatically add a 2–4 week buffer beyond the product page ETA.
  • Supplier-dependent / backordered items: If stock is delayed, we will notify you with a revised ETA. You then have 7 days to accept the new timeframe or cancel for a full refund.
  • Adloheat: Custom-made products from Adloheat (Pakenham, VIC) may take 4–12 weeks depending on the order.

Full fulfilment, cancellation, and freight rules are in our Terms & Conditions.

Biosecurity & Interstate Shipping Restrictions

Due to strict state biosecurity regulations, we are unable to ship some products to certain states and territories:

  • Potting Mixes cannot be shipped to Western Australia (WA), the Northern Territory (NT), or Tasmania (TAS).
  • Seeds cannot be shipped to Western Australia (WA).

Orders placed for these items to restricted states will be cancelled and refunded. It is the customer's responsibility to ensure that the items being ordered can lawfully be delivered to their state or territory.

You may proceed at the corrected price, choose an alternative, or cancel for a full cash refund. A 105% store credit may be offered as a courtesy bonus at our sole discretion only.
