Description

Opinel - Intempora N°219 Santoku Knife – Premium 17cm Sandvik 12C27M Stainless Steel Full-Tang Culinary Workhorse

The Opinel Intempora N°219 Santoku Knife is a premium, high-performance Japanese-style kitchen knife masterfully engineered to bring exceptional precision, structural power, and modern French refinement to your daily culinary workflow. Meaning "three virtues" in Japanese, the Santoku profile is celebrated globally for its absolute mastery over slicing, dicing, and mincing. This professional-grade tool features a heavy-duty, full-tang blade forged from modified Sandvik 12C27M stainless steel, heat-treated to an optimal 57-58 HRC hardness for remarkable edge retention, high corrosion resistance, and effortless maintenance. Upgraded with an ergonomic, high-strength structural polymer handle that is completely seamless and moisture-resistant, this perfectly balanced 30 cm knife delivers an ultra-secure, anti-fatigue grip under intensive prep conditions, making it an essential centerpiece for discerning home cooks and professional chefs alike.

Best For Home gourmets, professional kitchen prep stations, and culinary enthusiasts looking for a heavy-duty, low-maintenance, and ultra-sharp full-tang Santoku knife that delivers absolute control when processing dense vegetables, delicate proteins, and fresh herbs.

Key Features

  • Premium Swedish Sandvik 12C27M Steel: Precision-forged from an optimised martensitic stainless steel alloy, delivering professional-grade structural toughness, maximum defense against pitting, and a razor-sharp factory edge.

  • Professional 57-58 HRC Heat Treatment: The technical core of the blade is hardened to ensure a lasting cutting bevel that stands up to heavy daily chopping while remaining resilient enough to quickly hone back to factory sharpness.

  • High-Strength Structural Polymer Handle: Molded from a high-density, glass-fibre reinforced polymer composite that completely repels water absorption, kitchen oils, and high thermal shifts for a highly hygienic, crack-free lifecycle.

  • Full-Tang Mechanical Balance: The premium steel blade extends completely through the interior of the polymer handle from tip to heel, creating immaculate structural weight distribution and robust leverage during dense cuts.

  • Classic Santoku Geometry: Designed with a wide blade profile and a gently curved sheep's foot spine, allowing you to use a rapid, fluid rocking motion or straight vertical cuts while providing ample knuckle clearance over cutting boards.

  • Clean Portioning of Proteins: Slicing boneless chicken breasts, trimming fat caps from pork loins, or cutting paper-thin strips of raw beef for stir-fries and hot pots with single, fluid pulling strokes.

  • Rapid Mincing of Herbs and Aromatics: Utilizing the broad blade and gentle nose curve to rapidly mince fresh parsley, coriander, or garlic cloves while easily using the wide blade face to scoop up ingredients from the board.

  • An Elite Culinary Gift: Backed by iconic French manufacturing heritage and high-end metallurgy, making this an exceptional holiday, housewarming, or culinary graduation gift for passionate cooks.

Pro Tip & Intempora Knife Maintenance: Thanks to the advanced structural polymer handle and high-purity Sandvik 12C27M steel, the Intempora N°219 is exceptionally robust and far more moisture-resistant than traditional timber knives. To preserve the pristine integrity of the factory cutting edge for years to come, we highly recommend washing this premium knife by hand rather than placing it in an automatic dishwasher, where harsh abrasive detergents and contact with other steel utensils can dull the bevel. Simply rinse under warm water with a soft sponge immediately after use, wipe completely dry with a cloth towel, and store it safely in a wooden knife block or on a magnetic strip. Regular maintenance with a fine-grit ceramic honing rod will keep this French masterpiece operating at a razor-sharp standard!

Shipping & Lead Times

Important Note on Availability & Shipping

Our warehouse serves as our office and logistics centre rather than a retail showroom. Because we ship from multiple locations and manage high-turnover stock, not all items are available for immediate pickup.

Lead Times:

  • In-Stock Items: Usually ready for dispatch the same day.
  • Supplier-Dependent Items: Usually take 2–8 weeks to arrive, depending on supplier availability. Products from Adloheat may take 8–12 weeks to manufacture—they are made to order in Australia by a small business, and longer lead times reflect the care put into quality.

While we strive for fast delivery, some timelines are subject to supplier availability and are beyond our control. We appreciate your patience as we source the best quality gear for your project.

Biosecurity & Interstate Shipping Restrictions

Due to strict state biosecurity regulations, we are unable to ship some products to certain states and territories:

  • Potting Mixes cannot be shipped to Western Australia (WA), the Northern Territory (NT), or Tasmania (TAS).
  • Seeds cannot be shipped to Western Australia (WA).

Orders placed for these items to restricted states will be cancelled and refunded. It is the customer's responsibility to ensure that the items being ordered can lawfully be delivered to their state or territory.
